Not-So-Naughty Muesli Bars

A fabulously filling snack to always have on hand.

Ingredients
  • 1 1/2 cups dried dates
  • 2 tsp tea leaves
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/2 cup peanut butter
  • 3 cups muesli/granola
Instructions
  1. Soak dates in 2 cups of boiling water with tea leaves. Chuck everything except the muesli in a sauce pan and boil, stirring, until the dates break down a fair bit and everything caramelises a little. Zoom up with a zoomie stick to break down any dates or tea leaves that are still kicking around. Mix in muesli and push into a tray. It's a good idea to lay a sheet of baking paper on top so you can press down harder and create a really even top. Stick in the freezer. These are best kept in the frozen so they don't get sticky, but you can eat them basically straight out of the freezer. Probably not great lunchbox material but perfect for grabbing a quick snack as you race out the door.

All the excitement here today, it’s washing day!!! Wooohooo *heavy sarcasm*. The wind is up again today so thought I’d best make the most of it. I know plenty of people who are a little retentive when it comes to washing (I shan’t judge nuerocies, stones in glass houses!), and dearest darling Matt is one of them. I find this curious as I honestly cannot remember the last time I saw him hang a load out…. It definitely hasn’t been since I moved in…. Anywho, I digress. The best part about washing on windy days is his like for order (jeans on the outermost, workshirts on the next, then home shorts, then t-shirt, then jocks, then socks) is completely forgotten as it becomes entirely based on ‘grab a random piece of clothing then grab a piece of line as it whirls past’. My kind of washing!
