A beautifully fresh slice that makes a super easy gluten free smoko
- 125 g butter
- 1 cup sugar
- juice and zest of an orange
- 2 cups cornflakes
- 1 cup rice puffs
- ½ cup currants
- 1 cup shredded coconut
- 150 g cranberries
- 120 g sliced almonds
- 200 (ish) g chocolate (melted)
Combine butter, sugar, zest and juice over medium heat stirring well. Boil, stirring occasionally, for a few minutes until it starts to pull away from the edge of the saucepan and darkens slightly in colour. Mix everything else (except chocolate) together. Pour orange caramel over and stir well. Push into a slice tray and bake at 180 deg cel until top browns slightly. Let cool and smear with chocolate. Set in fridge, flip out and cut.

So I may not be allowed to eat yummy sugary things at the moment but that shan’t stop me creating and feeding to others! One of my oldest friends lives about an hour from Mum’s house and has been so so lovely and driving down to see me heaps. While I’ve been really struggling with missing home, her visits have been an absolute god-sent! She is celiac so I have been getting creative with different gluten free goodies, today’s being this Orange Cranberry Florentine Slice.
