Orange & Ginger Relish
Marmalade ish relish with a lovely ginger twist.
Ingredients
- 6 oranges (thoroughy zested and juiced)
- 3 cups dry ginger ale
- 1 onion (finely chopped)
- 3 apples (peeled and grated)
- 2 tsp ground ginger
- 1 1/2 cups sugar
Instructions
Bung everything in a big saucepan and boil away for a fair while until the majority of the moisture has evaporated and it's quite thick. Spoon into sterile jars and seal. Beautiful with any type of pork or for something a bit special try topping a wheel of camembert with this then bake it!

I can’t say enough how much I love friends who gift home grown goodies!!! I was so excited to be given a bag of oranges but I’m not a big marmalade person so thought I’d have a play with a relish that’s more versatile. Taaaaaadaaaaaaa!!!!!
