Lusciously light!
- 3 egg whites
- 125 g butter
- ¾ cup sugar
- ½ cup orange juice
- 1½ cups plain flour
- 1 tsp baking powder
- ½ cup coconut
- ½ cup slivered or flaked almonds
- ¼ cup orange juice
- ¼ cup water
- ¼ cup sugar
- 1 tsp butter
Beat egg whites to stiff peaks and set aside. Cream butter and sugar, then add in juice, flour and baking powder and once combined coconut. Mix about a third of the eggwhite in without being too brutal but thinning the mix a bit so that it is easier to very gently fold through the remaining whites. Spread in a slice tin, sprinkle with almonds and bake at 180 deg cel until lightly browned and cooked through. While that is in the oven, chuck all the syrup stuff in a saucepan and boil until it JUST begins to thicken, stirring so it doesn't burn. Pour over warm slice. Taaaaadaaaa!
The Ramblings
So excited, I have my calm, peaceful babe back today! What we were originally told was ringworm turned out to be a mild case of dry discoid eczema. It must have been itchy and driving the poor little possum nuts. Since we put the right creams on her this morning though, she’s a new Boo! Back to peacefully sleeping so I’ve finally gotten to type up this recipe for Orange Syrup Sponge Bars that I made weeks ago! Wooohooo!!!
Not a whole lot else to report today, our new house is still crawling with tradies so Boo and I are still with Mum, but Matt started work last week and is loving it. Such a huge relief! Also just great for poor Matt to get back out of town as I don’t think it would have been much longer before he developed a twitch… My twitch has well and truly set in, having spent 5 of the last 6 months in town. So special to get that time with Mum but hanging out for wide open spaces and silence. But more so, just to have our little family all under the same roof every night again will be heaven!
