A bought of nappy rash induced screaming yesterday called for quickly making some comfort food…. Enter Peach and Custard Slice!

Peach and Custard Slice

If a cobbler and a crumble slice had a baby….

Ingredients
Slice
  • 250 g butter (melted)
  • 2 cups SR flour
  • 1 cup coconut
  • 1 cup rolled oats
  • 1 cup sugar
Filling
  • 1 800g tin peaches in syrup (chop the peaches)
  • cup custard powder
  • 2 eggs
Instructions
  1. Mix all slice ingredients together. Push ⅔ of the mix into the base of a slice tin. Arrange the chopped peaches on top. Whisk together 1 cup of the peach tin liquid, custard powder and eggs the pour over. Sprinkle over remaining slice mix and bake at 180 deg cel until firm in the centre and nice and golden on top.

The Ramblings

I’ve been off the air for quite a while now sorry! I imagine I’ll continue to be quite sparatic, however will endeavor to make more time. I have still been madly creating away as well cooking my way through Grandma’s book and taking pictures, however haven’t been putting in the keyboard hours to get them up on here. The bonus of that though is I have a bit of a backlog, so whenever I get a free hour, I just have to get the fingers typing!

So, clearly lots has happened since I was last on here, where to begin? Hazel Mae Baker finally made her entrance into the world on the 01.08.2020. After so much speculation on when she would arrive, we had Monday the 3rd booked in as the final c section date. However, on the Saturday, while going around open houses with Matt’s brother, I started getting awful pain down low in my tummy near my hip. A chat to the midwives ended up in me going in for what I thought would be just some checks.

While I was on my way into the hospital, my OB rang the hospital to check everything was all good with them before he ducked out of town to to pick up a puppy. They told him I was making my way in and why and he decided to meet me there because apparently where the pain was was where my placenta was. Anywho, long story short, even though my obs were fine, for the sake of 2 days, he decided we’d go with the old ‘get in, get her out, don’t …… muck…… about’ theory, and about 2 hours later Miss Hazel was earthside. All 55cm and 8 pounds 8 of her!

I think I’ve pushed my luck long enough, I’d better duck and hang washing out before she wakes up again! To be continued!!!
