PIneapple Custard Slice

Pantry staples turned into scrumptiousness in minutes

Ingredients
  • 1 sleeve clix or ritz biscuits (finely crushed)
  • 1 cup desiccated coconut
  • 90 g butter (melted)
  • 1 tin crushed pineapple
  • 1 tin condensed milk
  • 3 tbsp custard powder
Instructions
  1. Mix together biscuits, coconut and butter then push into base of a square cake tin. Stick in the freezer while you make the top. Chuck everything else in a saucepan over low heat and whisk until very thick. Smear on base and chill for at least an hour or two. If you wanted to jazz it up a bit, try toasting some shredded coconut and sprinkling on top.

The Ramblings:

Even though I’m only 20 min from town now, I still love recipes for things that turn out a bit shmick but are made from just things I always have kicking around the pantry. Perfect for ‘bring a plate’ occasions, or like I did yesterday, felt I was coming down crook and wanted to whip something a bit special up to have on hand for jazzing lunch boxes while I’m feeling like death warmed up. One perk of being neurotically organised is being able to have a ‘sick day’ of sorts where I don’t have to do very much at all and everyone is still fed and happy and that’s the plan for today!
