In Matt's top 3!
- 125 g butter (melted)
- ½ cup sugar
- 1 tin condensed milk
- ½ cup coconut
- 1¼ cups SR flour
- 1 tin crushed pineapple (drained and 1 cup of juice retained)
- ¼ cup custard powder
- 1 cup icing sugar
Mix together everything except the pineapple juice, custard powder and icing sugar. Spread into a slice tray and bake at 180 until edges pull away and center is just firm.
In a saucepan combine juice and custard powder over a low heat until nice and thick. Take off heat, stir through icing sugar and smear over slice. Chuck in the fridge for a while before eating if you can help yourself.

If you like pina coladas…… Getting caught in the rain…… Definitely still down for pina coladas… However, the caught in the rain part wasn’t so crash hot the other day. Come check the deadie pile for pigs, he said. Bring the baby, it’ll be fun, he said. We won’t get any rain out of those clouds, he said…… I’m sure one day I will laugh about it but I’d get into yoga before I’d wrap Boo in my shirt and take the sharp muddy splatters as we fanged it home in the buggy again…
I have officially started back at work! Although in fairness, I am working from home…. Doing as many hours as I can…. whenever I get the chance….. So not sure it really counts but it will feel awesome to have my first pay check come back in. Matt is gorgeous but I don’t like feeling like a sponge so excited to be putting some money (albeit only a little bit) into the family bucket. Must admit I have no idea how anyone can be organised to actually go back to an office when bubs are only this little. My house is already a bomb shelter, I’m 3 weeks behind on washing and I’ve only been back working for 2. Whoops!
