Roast Capsicum Hummus

Roast Capsicum Hummus

Quick and easy dip that's a platter star, a fabulous 'just because' snack or a snazzy lunch box idea.

Ingredients
  • 1 capsicum
  • 1 tin chickpeas (drained)
  • 3 tbsp olive oil
  • 3 tbsp tahini
  • 2 tsp minced garlic (2 cloves if you have fresh)
  • 1/2 lemon lemon juice
  • 1 tsp all purpose seasoning
Instructions
  1. Cut capsicum into strips and bake it until the tips are just starting to blacken. Chuck everything in the blender/food processor/whizzy stick/nutribullet/whatever choppy things that takes your fancy and whiz until it is beautifully smooth. Stick in the fridge as it's yummiest cold. Serve with anything you like but I love chopping up tortillas and baking then until golden and crispy crunchy, delish!
