Decadence and diabetes on a plate!
- 125 g butter
- 2 eggs
- 1½ cups SR flour
- ½ cup milk
- ½ cup brown sugar
- 60 g butter
- ½ cup brown sugar
- 2 tbsp golden syrup
- 1 tsp salt
- ⅓ cup sour cream
- 60 g butter
- ¼ cup brown sugar
- 1½ cups icing sugar
- water
Pop everything for cake into a mix master and beat the crappers out of it for a few minutes until pale and creamy. Pop into a greased cake tin (just use your favourite it really doesn't matter…. I just use my favourite biggish square one) and bake at 160 deg cel until a skewer comes out clean.
When the cake is nearly done, pop everything for caramel except the sour cream into a saucepan and boil until it darkens the slightest bit and pulls away from the pan. Remove from heat and mix in sour cream.
Rummage through your utensils drawer and find an appropriate cake mutilation tool and poke caramel catching holes all through your cake.
Pour caramel over cake making sure to hit each hole.
For icing, pop it all in the mixer and add teaspoons of water at a time until it is a nice thick buttercream. Ice while just warm so that it seeps in and tops up the holes. Pop in the fridge and cool before attempting to remove from tin.

The Ramblings:
The inside of our house has been 98% done for quite a while now, however outside is another thing…. The outside of the house and surrounding buildings is being painted, my carport is nearly finished, the fence is mostly done, and a new workshop is just beginning. So lots of boys and tonka toys still zooming around, teaching Hazel to sleep through nearly anything…. Among the blokes working there’s two young fellas that say ‘bull’ instead of ‘mate’, so they have been dubbed Bull 1 and Bull 2. Friday was the Bulls last day before they went away for 5 weeks to do a reno on one of their girlfriends dads bathrooms and have Easter with family. On Wednesday I made biccies for them all and gave the container to one of the older blokes who apparently didn’t pass any on, so for their last day I made this salted caramel poke cake and let them decide whether to share or not….. I think or not was the decision!
