Satay Stir Fry

Satay Stir Fry

A delicious peanut sauce that you can make with whatever you have on hand

Ingredients
Sauce
  • 2 cloves garlic (minced or finely chopped)
  • 1 tsp ground ginger
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin
  • 1 tbsp sweet chilli sauce
  • 1 tbsp corn flour
  • 1 cup milk
  • 2 tbsp peanut butter
  • 2 tbsp curry powder
Stir Fry
  • 1 tbsp sesame oil (optional but makes a big difference)
  • 1 onion
  • 1 capsicum
  • 1 kg prepared meat (see notes)
  • steamed vegetables (see notes)
  • 2 packets crushed 2 minute noodles (don't use the flavouring)
Instructions
  1. Pop all Sauce ingredients in a shaker and shake well until combined. set aside

  2. Chuck the oil, onion, capsicum and meat into a large frying pan or wok over high heat and brown nicely.

  3. Mix in the vegetables, sauce and noodles in with an additional 1 ½ cups of water.

  4. Keep stirring over medium heat until the noodles are soft and sauce has thickened up beautifully.

Recipe Notes

You can use whatever meat and vegetables you have on hand. Today I had some bland pork sausages that needed using so I poached and chopped them up. If using mince, don’t worry about preparing it in any way, just brown it off with the onion and capsicum. If you are using sliced pieces of meat, make sure you velvet it with 3 tsp of bicarb  and let sit for 30 min before cooking.

In term of vegetables, use what you like/have on hand. today I steamed carrots, beans and cauliflower.

The Ramblings:

Trent is picking cotton around the house today. Hazie asked to go help him this afternoon so I got a little bit of one kiddo time! Wooohoooo! Hence why I managed to get dinner made by lunchtime to have decent light to get a picture and have gotten the recipe up tonight!
