A delicious peanut sauce that you can make with whatever you have on hand
Pop all Sauce ingredients in a shaker and shake well until combined. set aside
Chuck the oil, onion, capsicum and meat into a large frying pan or wok over high heat and brown nicely.
Mix in the vegetables, sauce and noodles in with an additional 1 Ā½ cups of water.
Keep stirring over medium heat until the noodles are soft and sauce has thickened up beautifully.
You can use whatever meat and vegetables you have on hand. Today I had some bland pork sausages that needed using so I poached and chopped them up. If using mince, don't worry about preparing it in any way, just brown it off with the onion and capsicum. If you are using sliced pieces of meat, make sure you velvet it with 3 tsp of bicarbĀ and let sit for 30 min before cooking.
In term of vegetables, use what you like/have on hand. today I steamed carrots, beans and cauliflower.
