Ingredients:
- 1 kg sausages (cooked and chopped)
- Veggies (I used 4 potatoes, 1 big sweet potato and 1/2 head cauliflower but most things will work)
- olive oil
- salt and pepper
- 2 tsp garlic powder
- 3 dried rosemary
- bbq sauce
- 2 cups grated cheese
Method:
Toss chopped veggies in a small drizzle of olive oil and seasonings. Spread out on baking sheet and bake at 200 deg cel for half to three quarters of an hour. Pull out and sprinkle over sausages, give a light drizzle of bbq sauce then top with cheese. Pop back in the oven until cheese has melted.
The Ramblings:
I love anything where I can boil sausages because as much as I love the taste, I don’t like eating such a huge amount of oil if I can help it because that’s more calories left for cake! On the note of calories, being surrounded by this much food all the time it is becoming apparent that I need to have a closer relationship with the gym… At the moment Matt has started back at footy training on Tuesday and Thursday nights so I’ve been putting dinner in the fridge for Jack and heading to town with Matt so I can work off my deliciousness.
