Hidden vegetable heaven!
- 1 kg mince (mutton is the best)
- 4 weetbix (crushed)
- 2 carrots (finely grated)
- 2 zucchinis (finely grated)
- 2 eggs
- 2 tbsp all purpose seasoning
- 2 tbsp garlic steak seasoning
- 1 onion (finely chopped)
- 2 tbsp worcestershire
- 6 sheets puff pastry
Bung everything other than the pastry and 1 egg into a bowl and give it a thorough smushing through with your hands until it comes together nicely. Lay logs of mince mix onto puff pastry (I get two per sheet). Then roll and chop each log in half. Arrange on trays, and brush lightly beaten second egg over top. Sprinkle tops with a touch of salt and bake at 220 deg cel for around half an hour or until pastry is browned and beautifully flaky.

My overseer is also my boyfriend and anyone could accuse him of being mentally allergic to anything that could be labelled ‘healthy’…. Hence why I love sausage rolls, mini quiches and any way that I can sneak some extra veggies into him. Sometimes I grate in sweet potato or basically any other veggies that need using.
