Perfect for meat pies, shepards pies, sloppy joes or the heatiest brekkie with an egg on toast.
- 1 kg mince (mutton or beef)
- 1 onion
- 2 tbsp worcestershire sauce
- 2 tsp garlic
- 2 tsp beef stock powder
- 1 tbsp all purpose seasoning
- 4 cups grated vegetables (today I used a very large sweet potato and a medium zucchini)
- ¼ cup barbeque sauce
- ¼ cup sweet chilli sauce
- 1 tbsp tomato paste
- 2 tbsp plain flour
- 1 cup water
Fry up everything before vegetables and cook down until little juice remains. Add vegetables and cook, stirring occasionally, for another 10-15 min. Mix together everything else and pour over. Stir continuously until sauce is very thick. Season well and enjoy.
I love using this in my pie maker with bought shortcrust pastry on the bottom and puff on the top. This is also the bottom of my shepards pie. Top hint for shepards pie, try making a sweet potato and cauliflower mash with sour cream for the top, a serious winner!!!
The Ramblings:
In an effort not to call bub ‘it’ we have dubbed ‘it’ Oscar for the time being. Lately it has been fair to say that Oscar is fuss pot, who, just like his father, objects to anything that could possibly hold some sort of nutritional value…. If it isn’t party pies, choc chip cookies or the odd mouthful of stewed apple, the kid is not having a bar of it. In an effort to trick him into accepting a vegetable or two I decided to make a big batch of savoury mince to turn into his beloved pies. Happily they seem to be staying down!!!! Whoohooooo!!!!
