Sour Cream Coffee Cake
Quick, easy, light and moist
Ingredients
- 3 tsp instant coffee (dry)
- 125 g butter (soft)
- ½ cup brown sugar
- 2 tsp vanilla
- 2 duck eggs (or 3 chook eggs)
- 300 mL sour cream
- 1½ cups SR flour
- 1 tsp baking powder
Instructions

Bung everything in and beat the bajeezus out of it. Pour into cake tin and bake at 180 deg cel until a skewer comes out clean. To make it proper flash, dust with icing sugar.

Don’t get me wrong, I love all of my jobs, and I’ve spoken before about how together they check the boxes of ‘Keeping Claire Sane’ but by golly I’m looking forward to holidays in January! This will be the first time I have ever had an ‘adult’ holiday. Ie, actually choosing a destination because I want to go there (not to visit fam or friends), going with the Matt, staying in motels, flying there, hiring a car, doing touristy things!!!! I AM SO EXCITED!!!! So now to stay super focused and not eat all my yummies so my fun holiday pants fit……
