Stuffed Sausage Casserole

It’s been a while since I have popped up a dinner but this is one of my all time favourites. I always have a million sausages that need using, so stuffed sausage casserole is always a winner in our house!

Stuffed Sausage Casserole

Packed with veggies and simple ingredients, an easy weeknight dinner that's full of flavour

Ingredients
  • 1-1.5 kg sausages (fat ones work best)
  • 2 onions
  • 2 big tsp minced garlic
  • 2 tbsp worcestershire sauce
  • 1 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp honey
  • 800 g tin of crushed tomatoes
  • 1 large grated sweet potato (could swap for a few carrots)
  • 1 large zucchini (finely chopped)
  • 1 capsicum (finely chopped)
  • 1 cup grated cheese
Instructions
  1. Poach sausages. Fry up 1 onion and 1 tsp garlic. Add in sauces, brown sugar, honey, tinned tomatoes and sweet potato/carrots. Simmer away for a few minutes until sweet potato is cooked. Pour red sauce into the bottom of a large baking dish. Fry up remaining onion and garlic with zucchini and capsicum until zucchini is just tender. Chop sausages lengthwise to about ¾ depth and splay slightly. Arrange in baking dish on top of sauce. Spoon zucchini mix into sausages and tip any remaining over. Top with Cheese and bake at 200 deg cel until cheese melts and begins to brown.

The Ramblings:

I know for a lot of people the world at the moment is causing a great deal of stress and I don’t mean to take anything away from that…. however… Holy dooly do I LOVE social distancing!!!!! Working from home in my jarmies, having lunch with Matt, not driving to town for work, so home at a reasonable hour to cook dinner (hence the stuffed sausage casserole last night!). Even better, being home to defrost meat in the sink during the day, getting to cuddle Miss Maggie on my brain breaks. Does life get any better?!?!?!!!!

I’m not oblivious to it though, I’m missing OB appointments in Toowoomba because flying down isn’t safe, and I’m a bit worried about what this is all going to mean for getting bub out of me. But, focusing on the positives, how good that I can sew or crochet during my lunch break!!!!

Given how sick I’ve been with this bub I’ve lost quite a lot of weight and for probably the first and last time in my life, the doctors are telling me to try and put weight on!!!!! How bloody brilliant!!!!! So being at home and having the pantry at my disposal for snacks is fantastic! This may get out of hand soon though…. But in the mean time I shall delight in my coke chocolate cake!
