Packed with veggies and simple ingredients, an easy weeknight dinner that's full of flavour
Poach sausages. Fry up 1 onion and 1 tsp garlic. Add in sauces, brown sugar, honey, tinned tomatoes and sweet potato/carrots. Simmer away for a few minutes until sweet potato is cooked. Pour red sauce into the bottom of a large baking dish. Fry up remaining onion and garlic with zucchini and capsicum until zucchini is just tender. Chop sausages lengthwise to about ¾ depth and splay slightly. Arrange in baking dish on top of sauce. Spoon zucchini mix into sausages and tip any remaining over. Top with Cheese and bake at 200 deg cel until cheese melts and begins to brown.
