The photo today leaves a little to be desired…. I promise this vegetable casserole tastes a darn side better than this photo makes it look!
An easy way to clean out the fridge
- 2 cups rice
- 4 eggs
- 3(ish) cups finely chopped or grated vegetables
- 1 packet cream of chicken soup mix
- 2 cups milk
- all purpose seasoning
- mayonnaise
- bread crumbs
- grated cheese
Cook rice and drain well. Mix in eggs, veggies, soup mix and milk. Spread into a casserole dish. Lightly spinkle with all purpose seasoning then spread over a good squirt of mayo. Lightly (and I mean lightly, don't go gang busters or it will be dry and yuck) sprinkle over some bread crumbs and top with grated cheese. Bake at 180 deg cel until cheese is beautiful browned.

Throughout my showgirl journey, a question that always seemed to come up was whether or not the benefits of social media outweighed the pitfalls. My answer always revolved around the fact that it’s here to stay and we just have to work around it.
Last week though my answer changed. For a fair while now I have been part of a facebook craft group. It has to be the most supportive and kind place. I have never, ever seen anything other than love shared there.
For Christmas, the amazing lady who runs it organised a craft swap. They didn’t have to be posted until the 1st of December but my swap partner was super organised and I got mine last week. Beautifully wrapped, I had every intention of saving it for Christmas day. I’ve spoken about it on here before but this will be my third Christmas in a row where I won’t get to see Mum. That sucks a lot. It makes it not really feel like Christmas. It really really sucks. Anyway, so I was so determined to leave it under the Christmas tree to try and make Christmas actually feel like Christmas.
Best laid plans… But I accidentally ripped the paper taking it out of the box. I wasn’t expecting anything big! After ripping it I couldn’t help myself so opened it… My head doesn’t leak often, but holy dooly, I cried so many happy, blown away, humbled tears. This beautiful lady, who I have never even met, has spent so so so much time on not only a GORGEOUS crochet blanket, but also the cutest crochet bunny teddy complete with fully handmade outfit and the snuggliest ears. If that wasn’t already beyond so much, she also made me notebook cover! So much WOW! I still can’t believe that she has gone to so much time and effort for just me. It blows my brain!
So as I sit here cuddled up under my blankie, I can tell you that yes, the benefits of social media far outweigh the pitfalls. There is no way to describe how much my heart explodes every time I see these gorgeous presents. From a lady I’ve never met!!!! And that, my friends, is the power of social media. Stuff the people who use it wrong. They are missing out.
