Rich and decadent but a little bit different.
- 125 g butter
- 1/2 cup sugar
- 200 g white chocolate chips
- 2 eggs
- 1/2 cup soda water
- 1 1/2 cups plain flour
- 1/3 cup rosella jam
In a saucepan melt together butter and sugar. Remove from heat and let cool for a minute then mix through half a cup of the choc chips until melted then the eggs. Add flour and soda water and mix well. Once quite cool add another 3/4 cup of choc bits. Pour into a square cake tin and add blobs of jam on top. Swirl a little with a skewer and bake at 180 deg cel until just firm in the middle. Once cooled, melt remaining white choc and drizzle over.
The Ramblings:
One of my favorite humans is one of the girls I met when I first came out as a govie, Meg. Her rum consuming skills are topped only by her incredible kindness, cracking sense of humor and no drama approach to life, all round legend! She has just completed her teaching degree and has moved back out here again!!!! I’m very excited that we are now living closer to each other than ever before (even if it is still 3.5 hours…)! Anyway, Meg came out to the Muttaburra races this weekend (which unfortunately my status as a seething mass of bacteria prevented me from attending) and on her way home Maggie and I went to town a quick picnic catch up, so good for the soul!
