Take your banana bread game to the next level with this caramel indulgence!
Melt butter in a frying pan then pop in sugar and syrup and keep stirring over low heat til combined. Chop the bananas lengthwise and plonk them in the frying pan too. Crank the heat up and cook for a few minutes until caramel is nice and golden. The bottoms of your bananas should get nicely browned too. Take off the heat. Your bananas should be nice and soft so smush them up a bit. Let cool for a few minutes (so you don't make scrambled eggs) then pour into a bowl with the rest of your bread ingredients. Mix well and pop into a loaf tin.
Chop your final banana in thin rounds and lay them on top of your batter. Sprinkle half the topping brown sugar over, then bake at 180 deg cel until a skewer comes out clean.
Once the loaf is cooked, pop the remaining ingredients into a mug and microwave in short bursts until it just starts to caramelise. While loaf is on a cooling rack, pour over caramel. Taaaadaaaaa!!!
ps, pro tip, cut with a moist bread knife and the caramel won't misbehave!
