Caramel Fudge Cake

A mud cake of sorts and you don't have to fuss around with white chocolate!

Ingredients
  • 125 g butter
  • 3 tbsp golden syrup
  • 1/2 cup brown sugar
  • 1 tin condensed milk
  • 1 1/2 cups SR flour
  • 1 tsp baking powder
  • 2 eggs
Icing
  • 60 g butter
  • 2 tsp golden syrup
  • 1/4 cup brown sugar
  • 1/4 cup milk
  • icing sugar
Instructions

  1. Pop butter, sugar and syrup in a saucepan and bring to the boil stirring until it becomes lovely and golden. Remove from heat and stir through condensed milk. Fold through flour and baking powder then eggs. Bake at 180 until a skewer comes out clean.

Icing

  1. Bring butter, sugar and syrup to boil. Same as cake, keep stirring while it turns a lovely golden. Remove from heat and add milk. Pour into stand mixer and with whisk attachment beat in enough icing sugar to be the right consistency.
