Easy no fuss cheese that is delightful in it's own right or as a substitute for feta or ricotta. Works well with lactose free milk.
Bring milk to the boil. Remove from heat and mix in appple cider vinegar. Pop some muslin, cheesecloth or even a new dishcloth in the bottom of a colander. Pour the separated milk through. Wrap the curds up in the cloth, squeeze out the excess liquid, Mix through seasoning then tie up and hang for 15-20 min. Pop in the fridge and use within a few days
