Classically delicious
Cream butter and sugar. Add egg, milk and vanilla. Stir in flour. Shape into balls and roll in cinnamon sugar. Place on trays and flatten with bottom of glass. Bake at 180 deg cel for approximately 10 min.
If using gluten free flour, add an extra quarter cup and let sit for 10 min before rolling. I'm not overly sure on the science of it, but I find that giving gluten free flour a few minutes to 'sop it up' seem to prevent needing too much more flour and in turn stops things being overly dry. Not sure, but that's what works for me.
