Quick and easy dessert that can be easily adapted for gluten, dairy or sugar free
- 200 (ish) g packet of plain sweet biscuits (I used sugar free marie biscuits but use whatever your favourite cheesecake base biscuit is)
- 250 g cream cheese
- 1 tbsp butter or coconut oil (melted)
- juice and zest of half a lemon
Chuck everything in the blender and blend until mostly smooth with a few small biccie bits left. Roll tsp into balls. Chuck in the fridge to 'set'. If you want to be super fancy, dip or drizzle with white chocolate and more lemon zest.
These 4 ingredient cheesecake truffles are fabulous full stop. But, if you are catering for dietary requirements they will be your best friend! For gluten free, just use gluten free biscuits. For lactose free, just use lac free cream cheese and coconut oil. Or, if you are like me, and needing a low sugar option (gestational diabetes), aldi sell 99% sugar free marie biscuits that work like a charm!
