Incredibly moist, super quick and bugger all washing up!
- 125 g butter
- ⅓ cup brown sugar
- ⅓ cup cocoa powder
- 1 can coke (I like using vanilla)
- 2 eggs
- 2 cups self raising flour
Bring butter, sugar, cocoa and coke to the boil in a big saucepan. Let cool for a few minutes before mixing in the eggs and flour. Bake at 180 deg cel until a skewer comes out clean.
I’ve had a bit of feedback that there are some people getting really flat or dense cakes…. I’ve never had this problem but the only thing I can think of is over mixing. When you are bringing it to the boil, mix as minimally as possible. Also think gentle thoughts when mixing in the flour and egg. The chemicals in the coke are reacting and creating lightness, its best not to bash that out of it…

IT’S A GIRL!
After we cut our cake and saw the pink inside I must admit I’m seeing polka dots, tutus, and ruffle bum nappy covers everywhere! It’s all starting to finally starting to feel real. Aside from a very violent exception yesterday, the sick has finally mostly subsided and she’s kicking hard enough that Matt can feel her now too! Anywho enough gushing from me. Do try the cake!!!!
