A quick, easy and filling side.
- 1 onion (chopped)
- 1 tbsp minced garlic
- 1 tbsp all purpose seasoning
- 250 g cream cheese
- 250 mL sour cream
- 1 tin evaporated milk
- 1 head broccoli (in florets)
- 1½ cups rissoni
- 1 cup grated cheese
Fry up onion, garlic and seasoning remove from heat and stir through cream cheese, sour cream and evaporated milk. Add in broccoli and rissoni. Pop in a casserole dish and top with cheese. Bake covered at 180 deg cel until rissoni is just tender. Bake uncovered for another few minutes until cheese goldens up nicely.
I’m running a few days behind with popping up recipes sorry…. This Broccoli Cheese Casserole was knocked up and chucked in the oven on Saturday after we had been in the yards. Worked perfectly, got home, knocked it together, chucked in oven, had showers, fed dogs etc etc. Then when I got inside, pulled foil off, cooked some snags and taaaaaadaaaaaaa! Dinner sorted!
The Ramblings:
Two years ago today I was dolled up in skirt, stockings, and hat; the full Qld showgirl get up. Sitting in the stands at the Blackall Show, watching the state junior judging finals for the merino sheep and wool competitions. I had straightened the mop on my head and smeared enough makeup on to try and hide the fact that I had just chucked up the last remnants of the cocktail party the evening before…. Classy, right?! (In fairness, it had been a bloody rough few months!).
Anywho, I’d been introduced to the young blokes that were competing and they seemed to really know their stuff! Two of them were all matchy matchy in their Barcaldine Downs Merino Stud pale blue shirts and navy ties. There was another bloke in the matchy matchy gear too but he wasn’t competing. He was sitting in the stands behind me, felt hat on back to front, nodding on and off, looking rather green in the gills.
The judging went on and I tried to continue my act of ‘feeling fine’ and being a ‘respectable young lady’…. The matchy matchy boys did well and Mr Green in the Gills (apparently their boss but barely older than them) came down for presentations and was helping them with their sashes. Unable to help myself, I gave him a bit of stick about being remarkably good at sashing boys…. hehehehe… (little did I know at that time that he’d had a bit of practice with sashes too… He was the reigning Australian Merino Junior Judge… whoops!!!)
It’s funny how things work out… 2 years on, nearly 7 months sober and a touch grumpy because Mr Green in the Gills spent last night hustling me and my preggo pillow for a greater share of bed space… A battle, which I am happy to report, he lost spectacularly!
Poor Hazel… The story of how her parents met doesn’t exactly paint either of us in a magnificent light… But hey, we’ve lived and learned!
