Quick, easy and fully loaded!
- 1 cup buttermilk (or 1 tbsp vinegar topped up with milk to make 1 cup)
- 1 cup coconut cream
- 3 cups SR flour
- 2 tbsp icing sugar
- 1 cup shredded coconut
- 1 cup blueberries (fresh or frozen)
- 1 cup chocolate chips
Preheat oven to 200 deg cel. Gently mix together everything except blueberries and chocolate chips. Be careful not to over mix, just bring everything together. Work in blueberries and chocolate. Turn out onto flour surface and cut as desired. Today I did triangles, suit yourself. Bake until lightly golden and sound hollow when tapped.

Hello! Long time no recipe!
Life here has seen lots and lots of changes, all for the better! My beautiful partner and I are now engaged, expecting another little girl in January, I’m living out of town again (woooooohoooooooo!!!!) and life is generally fabulous. Hazel is loving life and a bit of stability after a pretty hectic 2 years of being earthside. We have puppies at the moment too!!! Preggo hormones and baby animals should not be allowed to mix… there is a beautiful little girl who is sick so I have puppy-napped her and she now resides in my bra. Even I’ll admit I’ve got the crazy dog lady look down pat!
