A chewy, filling, ANZAC like slice that's topped with decadent ginger icing.
- 125 g butter
- 3 tbsp golden syrup
- 2 tbsp boiling water
- 1 cup muesli whatever kind you have on hand
- 3/4 cup coconut
- 1 cup plain flour
- 3/4 cup sugar
- 1 cup sultanas
- 1 tsp bicarb
- 1 tbsp golden syrup
- 1 tsp ground ginger
- 1 1/2 cups icing sugar
Mix bicarb an boiling water in a cup. Melt butter and syrup, remove from heat then bung in the bicarb (it will bubble like mad). Add everything else in, push into a slice tray or square cake tin and bake at 180 deg cel until golden brown and pulling away from the sides.
Mix everything together and add half a tsp of boiling water at a time until desired consistency. Spread on cool slice.

Yesterday Mum picked up my puppy for me!!!! She is a German short haired pointer (so hopefully she won’t chase sheep…. fingers crossed she will just point at them!) and is named Maggie. I’ve been prepping Bill for her arrival on Sunday, telling him about his rather rambunctious older sister who it turns out is already a chewer. Particularly on anything she thinks she might get milk out of, much to Mum’s boy dog, Mac’s horror…..
