Add some pretty to the smoko plate with these crispy yet chewy gems.
- 125 g butter (soft)
- 1 cup sugar
- 1 lemon of juice
- 2 eggs
- 2 1/4 cups plain flour
- 2 tsp baking powder
- yellow food colouring (optional)
- icing sugar
- extra white sugar
Cream butter and sugar. Add eggs and lemon juice. Add everything else and beat until well combined. Stick in the freezer for 15-20 min to firm up a bit. Roll tsp ball of mix first in normal sugar then icing sugar. Bake at 180 deg cel until just firm (should not have browned at all on top).
The Ramblings:
I try to always be so authentic on here. What goes through my head normally falls right out onto the keyboard and I love that because you (if anyone actually reads this rot!) get to be a part of a snippet of my world. Through all my involvement with the Showgirl and Rural Ambassador movements I have so often heard (and participated in) discussions around the future of Ag, how the media and ‘telling our story’ is going to be pivotal in this new era where people are more aware and interested in their food story. Today though, I made these biscuits to go out for shooting snacks and it hit me, I would love to tell you about the gorgeous bloke who comes here to fill permits. However I can’t. Why can’t I tell you happy stories of feeding people who are doing necessary work? Because some people know which property I’m on and realistically if you don’t it would probably be pretty easy to figure out. I would love to tell you about when I learnt to shoot at age 22 alongside my schoolroom pupil who was around a third of my age, but I can’t again. It makes me sad that I can’t share these innocent parts of my reality because someone could take it the wrong way, get bent out of shape and cause drama for people I care deeply about. People who have done nothing wrong, only caring for their land and livestock responsibly. So today I’m chewing on the question of how are we supposed to go about telling the awesome story of agriculture when we are gagged by chance of offending those who can only be described as ignorant?
PS, note to self, don’t get distracted rambling about the woes of the world while the last tray of biccies is still in the oven….. Whoops!
