Good scones are the quintesential 'smoko', quick, easy and darn delicious.
- 3 cups SR Flour
- 1 tbsp icing sugar
- 300 mL cream (a 250mL UHT is fine, just chuck in an extra dash of milk)
- 1 cup buttermilk (or 1 cup milk, 1 tbsp vinegar left to sit for 5 min)
Preheat oven to 220deg cel. Bung everything in a bowl. Mix well. Add a touch more milk if dry. Cut as desired. In oven until cooked.
This recipe is verbatim how my mum copied Marg’s recipe into my book. Safe to say I know where I get my less than eloquent recipe writing from!
The Ramblings:
My Mum owned a cafe for a fair few years and she was big on real baking, no plastic, pre-made, coffee club style food. She baked fresh every morning and these scones were a staple. It turns out you can have too much of a good thing though, the running joke in our house was even our dogs were sick of scones! It took until a year or so ago but I love scones again now and these really are the best of the best. Marg Jones was a lovely lady from Kaimkillenbun, Mum went to school with her son (who was tragically killed very young) and when my parents separated, my brother, Mum and I moved into a house Marg owned. It’s noteworthy that that house (which I loved very very much!) had a purple and green kitchen….. Purple and green…. We used to call it the Jacaranda room!
