Cashew Chicken
Got to love a good fake-away!
Ingredients
- 500 g chicken thighs
- 1 onion
- 2 carrots
- ¼ head cauliflower
- 4 shallots
- 1 tbsp garlic
- 4 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 ½ tbsp honey
- 2 clumps long life noodles (rehydrated according to packet)
- 150 g natural cashews
Instructions
Chop up vegetables. Mix together the garlic, oyster sauce, fish sauce and honey. Stir-fry meat then veggies (not shallots) in batches. In a separate small pan, roast the cashews (keep a close eye they don’t take long!). Return all meat and veggies to pan with noodles and sauce. Cook for a few minutes stirring constantly. Top with cashews and shallots.

This is perfect for freezing. To me there is nothing better than on Friday nights pulling something from the freezer and pouring a big, big, big glass of wine!
