Gluten free without anything 'funkier' than a couple old tins of chick peas.
- 60 g butter (soft)
- 2 tins chickpeas (drained and rinsed well)
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1/2 cup desicated coconut
- 2 tsp baking powder
- 1 cup choc chips
Chuck everything except choc chips in a food processor and zoom the proverbial out of it until super smooth. Mix in your choc chips. Pop in the fridge for half an hour. Bake at 180 deg cel until lightly browned. Let cool on trays.
The Ramblings:
One of my oldest friends is ceoliac and there are so many people now who (whether you agree with their reasoning or not) seem to opting for a lower/no gluten diet. As much as I am all for using all different gluten free flours and all these new fangled options to create delicious options for GF friends, I find a lot these recipes require you to take out a mortgage on cake…. Particularly when you don’t have coles or woolies brands as options. So! Here’s my GF, cheap and ‘normal’ ingredients biscuits. I can order a solid range of essentials on my stores but definitely not anything ‘new fangled’ so my theory is, if I can get everything for a recipe from stores, most people will have it all kicking around in the back of their pantry.
Anywho, life here is happy enough chaos. I think the best descriptor of my animals friends would be ‘rambunctious’. Feeding time is like trying to wrangle 5 enraged toddlers…
