Fudgy and decadent!
- 125 g butter (soft)
- ½ cup brown sugar
- 2 bananas (mashed)
- 2 tsp vanilla
- 1 cup SR flour
- 1 tin condensed milk
- ½ cup desiccated coconut
- 2 tbsp custard powder
- 1 cup chocolate chips
Mix everything together. Pour into a slice tray and bake at 180 deg cel until nicely golden on top and pulling away at the edges. Because it's quite fudgy, it's a good idea to let it cool and set a little before cutting.
With a toddler who oscillates between being a monkey then being horrified at my audacity to offer her a banana, I’m always on the look out for delicious ways to use up overripe bananas. When I’m feeling virtuous I make healthy banana & oat pancakes, other naughty days I love Banana Chocolate Chip Cookies. When I’m feeling naughty and have zero energy though, I can’t go past how quick and delicious this Banana Chocolate Chip Slice is. Kind of has a blondie texture to it…. Most of my favourite simple slices started their life as a Wendy’s Best Ever Slice, as I am yet to find any slice that’s easier or has a nicer texture. So I take that and change it around to use up whatever I have on hand and completely change the flavour profile to match. Always ends up a winner!
So my photography skills went up that creek with this Banana Chocolate Chip Slice but trust me on it… I made it last night and knew it wouldn’t last long enough to take good photos in daylight today!

Comedy for the day… Well I’m sure I will laugh about it once its cleaned up….
Looks like Hazel is destined for artistry. While I was typing this recipe up she decided to play with a new medium, Bluey toothpaste on mirror… She is has moved on from her orange bath gel period from yesterday and is experimenting with a Picasso inspired blue period….
