A quick and easy, chuck together loaf that is full of flavour and utterly decadent!
- 125 g butter (chopped)
- ¾ cup sugar
- ½ cup custard powder
- 1 cup milk
- 1½ cups SR flour
- 3 eggs
Over low heat combine butter, sugar, custard powder and milk. Whisk until butter has melted then pulls together to form a thick custard, remove from heat. To save washing up you could just mix in your flour and eggs by hand but my preference is to bung it in the mix master and beat the crappers out of it for a few minutes until beautifully smooth. Pop in a loaf pan and bake at 180 deg cel until a skewer comes out clean. Once cooled, if you want to be spiffy, top with buttercream or a thin orange juice glaze icing.
The Ramblings:
Despite the continued spewing and now also nose blowing, life here is good! My cluckiness now has an outlet… Her name is Possum, and she is a 4 week old Kelpie puppy that her Mummy decided she didn’t want. When we first took little miss Poss she could barely hold her head up but now could be mistaken for a blue dog and she scampers around my feet and chomps on my heels while I make her milk. Most adorably though, she goes like the clappers, right up until she passes out, often while still chewing on her paw…
Miss Maggs isn’t taking so well to no longer being an only child, however, she is quite fond of cleaning Poss after she’s wallowed in her morning porridge! The size difference concerns me a little given that Possum is only just bigger than one of Maggie’s ears!
