“It’s hot” Chops
The perfect way to use up casserole chops in summer.
Ingredients
- 1 mutton neck of chops (could use forequarter chops too)
- 1 onion finely chopped
- 2 tbsp worcestershire sauce
- 2 tbsp tomato sauce
- 1 tbsp sweet chilli sauce
- 1 tbsp honey
- 2 tsp garlic
- 1 tsp mustard (optional)
Instructions
Mix everything for the sauce (including onion) together and pour over chops. If time permits, let marinate in the fridge. If not, don't fret, just chuck them in a baking dish (uncovered) and bake in a slow oven for 3-4 hours. Beautiful served with pearl barley and veg or salad.
The Ramblings:
Not much to ramble about today. First night of ballet classes last night went really well, gorgeous kids that are super enthusiastic. Only downside, it’s been a while since I have danced for that many hours…… Walking without making dinosaur sounds is a luxury I no longer possess. Reminding myself it is ‘good pain’…….
