A moist, dense, cake with a beautiful texture.
- 1 cup mayonnaise
- 1 cup brown sugar firmly packed
- 1 egg
- 2 tsp vanilla essence (only 1 if you have extract)
- 1/4 cup cocoa powder
- 2 cups SR Flour
- 1 tsp baking powder
- 3/4 cup milk
Cream mayonnaise and brown sugar until it pales. Chuck in everything else and beat for a few minutes. Stick it in a cake tin and bake at 180 deg cel until a skewer comes out clean. Once cooled, it's super yummy topped with a choc butter cream.
The Ramblings:
I was on the phone with Mum this morning (as per ususal) while she was getting ready for work and I was having Maggie morning nap cuddles. Among yabbering about everything under the sun, the concept of mayonnaise cakes came up. I had never heard of this madness but as Mum said, it makes sense, it’s really just eggs and oil. Anywho, I did a heap of pinterest-ing and in true Claire form, couldn’t follow someone else’s recipe without tweaking it more to my style, and so my Chocolate Mayonnaise Cake was born! This got me thinking too about making my own mayo or aioli….. Stay tuned, experiments are about to commence!!!
