Taco Soup
A hearty and filling winter warmer
Ingredients
- 1 onion
- 1 capsicum
- 2 carrots (super finely chopped)
- 2 cobs corn
- 1 sachet taco seasoning
- 1 kg mince
- 1½ cups split red lentils
- 800 g tinned tomatoes
- 1 L vegetable stock
- 400 g baked beans (or can use a can of 4 bean mix drained)
- 2 tbsp tomato paste
Instructions
Fry up vegetables, mince and seasoning until mince is nicely browned off. Bung in everything else and let fester away until ready to eat, adding more fluid as necessary. Serve with sour cream, shallots and toasted tortilla chips.
With a bit of cooler weather I have been hanging out for soup season! I found a packet of taco seasoning in the cupboard and the epiphany of taco soup hit me!
The Ramblings:
Today was a pretty entertaining day… Suffice to say that the Toowoomba kid we have out helping at the moment has never had much to do with any livestock before and today we were semen sampling rams………….. Don’t think he’ll ever quite be the same again!
