So Taco Stacko is definitely not the most photogenic meal, however, I guarantee once you’ve tried it you won’t care what it looks like!
Take taco Tuesday to new levels!
- 1 kg mince
- 1 packet taco seasoning (maybe a second if you like spicier tacos, one is quite mild)
- 1 onion
- 1 tbsp minced garlic
- 1 capsicum (chopped)
- 1 carrot (finely chopped or grated)
- 1 zucchini (finely chopped or grated)
- 400 g tin of corn (drained)
- 800 g tin of tomatoes
- 3 tbsp tomato paste
- 6 tortillas
- 3 tbsp sour cream
- 1 cup grated cheese
Fry of mince, seasoning, onion and garlic with a good dash of S&P. Add in capsicum, carrot, zucchini, corn, tinned tomatoes and tomato paste and cook until veggies are tender and excess liquid has evaporated. In a casserole dish or spring form pan that is just bigger than your tortillas, layer up mince and tortillas like lasagna. Smear the top wrap with sour cream (easier to do before adding it to the stack), top with cheese and bake at 200 deg cel until the cheese browns on top.
Matt doesn’t like beans so sadly I can’t make it with them, however, for something a bit different, try halving the mince and adding 2 x 400g tins of 4 bean mix (drained).
Pro tip: if you are using a spring form pan, sit a dish underneath it unless you want to take out shares in oven cleaner…….

There’s nothing better than those friends who you pop down to have morning smoko with, then look at the time and realise its accidentally 5pm and you’ve spent the whole day talking and drinking tea. So lucky to have found people that I’m so comfy with that I can rock up at their house in tights, my snuggly bug cocoon jumper (knitted by mum) and my favourite pink love heart socks pulled up like a bus driver and just be comfy and happy. The world needs more friends like these!
