Light but decadently rich and flavourful
- 125 g butter (soft)
- 1 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup plain flour
- 1 tsp baking powder
- 1 cup white chocolate bits
- ½ cup dried cranberries
Preheat oven to 150 deg cel.
Cream butter and sugar very well.
Add egg and vanilla and beat for another minute or so.
Beat in flour and baking powder.
Fold in chocolate and cranberries.
Pop in freezer for 15 min to firm up a bit.
Roll into balls and pop on trays leaving plenty of room between. Bake until just golden.
Let cool on trays.
This one is quite important not to have the oven too hot. They are quite buttery cookies that if hit with too much heat will go goosh with burnt edges; not great.

Picking is nearly over, woooohoooo!!! and my Mum is here, woooohoooo!!!! And if picking, moving house, raising 2 under 3 etc wasn’t enough, this idiot decided to become a Tupperware lady…. Is actually the best piece of sanity ever though!
